St Patricks Day 2015
Lá fhéile Pádraig sona dhaoibh! (Irish for: “Happy St Patrick’s Day to you”.)
With some Irish in my blood (on both sides of my family!), I decided it would be fun to make some themed food this year – any excuse for food! I had some lamb in the fridge that was perfect for an Irish Stew, and I looked up some recipes and created my own version.
1 kg lamb chops
2 carrots, peeled and roughly chopped
2 parsnips, peeled, cored and roughly chopped
2 sticks celery, roughly chopped
3 large onions, sliced
100gm pearl barley, soaked in salted boiling water for 20-30 mins then drained
500ml good quality beef stock
Fresh parsley, rosemary and sage, finely chopped
Brown the meat in an oven proof dish, allowing any fat to render out, remove and set aside
Add all the veges to the pan and toss in the rendered fat
Pour in Guinness to deglaze the pot
Add the meat back into the pot
Add the pearl barley and herbs
Pour over the stock over the contents of the pot and stir in
Bring to a simmer on the stove top, then put into oven at 160 degrees for approximately two hours, stir occasionally, seasoning to taste
When the stew is thick and the meat is falling apart you are ready to serve
Serve with mashed potatoes.
