French Toast

French Toast is one of my favourite brunches, served with bacon, blueberries and mascarpone – yummy! And so easy to make too.

French Toast with Bacon, Blueberries and Mascarpone

Serves 2

Ciabatta loaf, sliced (or another firm dense bread)
3 Free Range Eggs
1/4 cup milk
2 Tbsp brown sugar
1 tsp vanilla essence
3/4 – 1 cup blueberries, fresh or frozen (defrosted)
200gm packet of mascarpone
2 tsp vanilla essence
2 Tbsp maple syrup
Maple syrup to serve

Lightly whisk together eggs, milk, sugar,  and 1 tsp vanilla essence
Optional: add blueberries to mixture.  This is especially good with ciabatta that has the air pockets as you can push the blueberries into these for cooking
Place four slices of bread into a flat dish and pour the egg mixture over them. Leave them to soak the mixture up
Once all the egg mixture has been soaked into the bread, heat a flat bed toasted sandwich maker
Place the bread onto the heated plate and cook until golden, then turn over
While the french toast is cooking, put the mascarpone into a small mixing bowl, add remaining vanilla essence and maple syrup, and mix in
Cook bacon your preferred way (we like to grill to get the crispy rind)
To serve: put french toast onto a plate, top with bacon, blueberries (if not in the french toast), mascarpone, and drizzle with maple syrup
