For my Birthday I got a waffle maker, and I love it even more than I thought I would! I found a great recipe in one of my Jamie Magazines, easy to make and done with things I have in the cupboard/fridge all the time. And I serve with grilled bacon, mascarpone, and fresh fruit. Recently our raspberry bushes have been continuing to fruit so we’ve been eating them, and in the past we’ve had blueberries, strawberries and bananas.


1 cup flour
2 teaspoons baking powder
1 teaspoon sugar
1 egg
1/4 teaspoon vanilla essence
1 cup milk

Preheat your waffle maker
Mix the dry ingredients together
Whisk in the egg
Add the vanilla essence
Pour in the milk slowly
Whisk until smooth
Cook as per waffle maker instructions, keeping warm in the oven as required


1 packet mascarpone
Maple syrup
Vanilla essence

Mix the maple syrup and vanilla essence into the mascarpone to taste.

Serve the bacon, mascarpone and fruit on top of the waffles.
